 Farm-Grown Garlic

At Allstar Organics, we grow garlic for both fresh seasonal use and for the pantry staples we make from it on the farm. We harvest some of our garlic early in the spring as green garlic, with its tender stalks and bright, fresh flavor, and we let the rest mature into full heads. From there, we turn our garlic into a small range of organic garlic products, including organic garlic powder, organic garlic salt, and organic garlic chips.

Garlic has long been one of the most useful ingredients in the kitchen, and for us it is one of the most satisfying crops to grow, harvest, dry, and work with by hand. Whether used fresh, dried, or blended into seasoning, farm-grown garlic brings depth, fragrance, and warmth to everyday cooking.

How We Grow Our Garlic

We currently grow softneck garlic on the farm. In the past we have grown both hardneck and softneck garlic, but today we focus on softneck for its versatility, keeping quality, and usefulness across the different garlic products we make. Each season begins in the field, where the garlic develops slowly and takes on the character of the land, the weather, and the care that goes into growing it well.

Because we work with garlic at more than one stage, we are able to appreciate its full range. Early in the season, green garlic offers freshness and delicacy. Later on, mature garlic heads bring the fuller, drier, more concentrated flavor that makes garlic such a lasting kitchen staple.


Green Garlic in Spring

In spring, we pull some of our garlic young and enjoy it as green garlic. At that stage, the stalk is still tender and the flavor is milder, greener, and more delicate than a cured garlic head. Green garlic can be chopped into soups, stirred into eggs, folded into pasta, or cooked gently with vegetables for a fresh allium note that feels especially welcome at the turn of the season.

For cooks who have never used it, green garlic is one of the pleasures of the spring kitchen. It carries the unmistakable character of garlic, but in a softer, fresher form that can be used generously and creatively.


Mature Garlic Heads

The rest of the crop is left to mature into full heads. Mature garlic has the concentrated flavor, papery wrapper, and storage life most people associate with garlic in the kitchen. This is the stage that gives us the depth and strength needed for drying, grinding, blending, and seasoning.

We value mature garlic for its balance of pungency, sweetness, and savor once cooked. It can be roasted, sautéed, sliced thin, pounded into sauces, or dried for later use. It is one of the ingredients we return to again and again because it brings structure and flavor to such a wide range of dishes.


From Farm Garlic to Garlic Products

We use the garlic we grow to make several of our farm products, including organic garlic powder, organic garlic salt, and organic garlic chips. Each one offers a different way to bring the flavor of garlic into everyday cooking.

Our garlic powder is useful when you want the depth of garlic to disappear smoothly into a dish. Our garlic salt combines garlic with mineral-rich salt for easy seasoning. Our garlic chips offer texture, concentration, and a more direct expression of dried garlic. Together, they make it possible to keep the flavor of farm-grown garlic close at hand throughout the year.


Softneck Garlic in the Kitchen

Softneck garlic is especially useful in everyday cooking because it is dependable, versatile, and easy to work with across many styles of preparation. It can be minced into dressings, simmered into sauces, folded into soups, roasted whole, or dried for seasoning blends and pantry staples.

We like garlic best when it feels integrated into the rhythm of ordinary meals — rubbed into toast, softened in olive oil, stirred into beans, paired with greens, or added to a pot of soup. Good garlic does not need much around it to be expressive. It brings body, aroma, and warmth with very little effort.


Cooking With Garlic Every Day

Garlic is one of the most adaptable ingredients in the kitchen. Fresh garlic can be used in sautés, marinades, pasta sauces, soups, braises, and roasted vegetables. Dried garlic products are just as practical, especially when cooking on the fly or building flavor in layers.
